Maker Stories

For me, hot sauces weren’t really a thing growing up in Scotland (outside of the occasional dusty bottle of Tabasco left at the back of a cupboard). It was only when another local hot sauce maker called The Glasgow Chilli Guy started making his wonderful sauce Megadeth did I realize just how tasty they could be.

I credit my mom for introducing our family to an eclectic array of cuisines from as far back as I can remember, including Thai, Indian, and Japanese, all before the age of 10. The house rule was you didn’t have to like it, but you had to try it.
My name's Mark and I run Singularity Sauce Co. I'm a Scottish sauce maker based in Aberdeenshire. I create sauces using local and seasonal produce, wherever possible. You want to know more? Great! Read on.
We started this company by accident in 2018. It started with a cayenne pepper falling from its plant and I thought that our red dirt it landed on was what made this pepper hotter than a normal cayenne.
We start with sourcing our key fresh ingredients from local and regional farms and suppliers to reduce our carbon footprint. Our pepper supplier is only a few miles down the road from our facility. Our labels are made from recycled paper and of course, our glass bottles and PET lids are recyclable.

We are still a tiny company with a small warehouse on one side of town and separate office space on the other. Will, Rose & I spend almost every weekend from April 1st through the end of November on the road, trying to build brand identity.
Haico is not originally from Canada, but he moved here in 2005. Now, something you need to know about him is that he grew up in a very multi-cultural background and grew up with several spicy foods.
I grew up in a house divided. My father was a lover of spice, at least on his terms. Not too many meals went by without the bottle of Frank’s Red Hot Sauce or the jar of crushed red pepper.
Rick Ewing, a contractor by trade, created the Eaglewingz brand during the rise of popularity of wings on appetizer menus in the 80's. Wanting a sauce for home use and not finding what was desired on the grocery shelves, Ewing concocted just the taste he was after right in his home kitchen.
As far back as a child growing up, I have loved spicy foods. My brothers and I would always come together to make mango chow, which is green mangoes thinly sliced, mixed with fresh hot peppers, salt, black pepper, fresh garlic etc.
My first memories of being introduced to hot and spicy food came around the young age of 6 years old, where my parents would pack the family car and head off to upstate NY farms to pick fresh vegetables, which included hot peppers.
